Drinks Watermelon Cooler
Serves : 6. Makes 2 ½ pints

Ingredients
- 900g chilled watermelon flesh, plus extra for garnishing
- 150g chilled pineapple flesh
- 300ml chilled coconut water
- 60ml freshly squeezed lime juice
- knob of ginger, peeled and finely chopped
- crushed ice, to serve
- mint sprigs, to garnish
Method
Cut the watermelon into cubes and place in a liquidiser. Add the pineapple, coconut water, lime juice and ginger. Blend until smooth then sieve into a large measuring jug. Fill a large jug with a handful of crushed ice and pour over the watermelon mixture. Stir and pour into glasses. Top with crushed ice. Garnish with a wedge of melon and a mint sprig.
