Veg Fritters

Ingredients

  • 275g courgettes, coarsely grated
  • 150g broccoli, finely chopped
  • 2 tbsp mint sauce
  • 200g feta, crumbled
  • 1 egg
  • 75g plain flour
  • Sea salt and freshly ground black pepper
  • 2 tbsp vegetable oil
  • 300g Jack’s egg noodles
  • 180g Jack’s sweet chilli stir fry sauce

Method

  1. Coarsely grate the courgettes into a bowl then squeeze really well to get out any excess moisture. Discard the liquid and pop the courgette back into the bowl.

  2. Add the broccoli, mint sauce and feta and mix well until combined.

  3. Make a well in the centre of the bowl and crack the egg into it. Stir briefly then add the flour, salt and black pepper and mix until totally combined and everything is coated in the flour/egg mixture.

  4. Heat a large frying pan until hot, add a little vegetable oil and large spoonfuls of the mixture. Turn the heat to medium and fry for 1-2 minutes on each side until golden brown and set.

  5. Remove and keep warm in a low oven, then repeat with the remaining mixture.

  6. Heat a wok until hot, add the last of the oil and stir fry the noodles until hot through. Add ¾ of the sweet chilli stir fry sauce and toss until coated and hot.

  7. Divide between serving plates, add the fritters and the last of the sweet chilli sauce as a dip. Serve straightaway.
