Ingredients
- 4 sweet potatoes
- ½ pack Jack’s grated mozzarella
- Sea salt and freshly ground black pepper
- 1/3 pot Jack’s tomato and herb sauce
- 12 cherry tomatoes, halved
- Freshly ground black pepper
- Handful basil leaves
Method
- Pierce and microwave sweet potatoes for 15 minutes until cooked through.
- Preheat the oven to at 210°C, fan 190°C, gas mark 7.
- Lay on parchment lined tray and cover with a second sheet of parchment.
- Lay a cake tin/tray on top and press down gently to flatten.
- Spread over tomato and herb sauce, mozzarella and cherry tomatoes.
- Season with black pepper.
- Bake for 10-12 minutes until bubbling.
- Serve with basil.
