Sweet Potato Pizza

Ingredients

  • 4 sweet potatoes
  • ½ pack Jack’s grated mozzarella
  • Sea salt and freshly ground black pepper
  • 1/3 pot Jack’s tomato and herb sauce
  • 12 cherry tomatoes, halved
  • Freshly ground black pepper
  • Handful basil leaves

Method

  1. Pierce and microwave sweet potatoes for 15 minutes until cooked through.
  2. Preheat the oven to at 210°C, fan 190°C, gas mark 7.
  3. Lay on parchment lined tray and cover with a second sheet of parchment.
  4. Lay a cake tin/tray on top and press down gently to flatten.
  5. Spread over tomato and herb sauce, mozzarella and cherry tomatoes.
  6. Season with black pepper.
  7. Bake for 10-12 minutes until bubbling.
  8. Serve with basil.
