Lunch/Dinner Sweet and Sour Chicken with Rice

Cooking Time: 10 minutes
Ingredients
- 2 tsp vegetable oil
- 1 x 250g pack Jacks diced chicken breast
- 1 x 320g pack Jacks Pepper Stir Fry
- ½ x 440g jar Jacks sweet and sour sauce
- 300g Jacks Long Grain Easy Cook Rice
- 2 tsp Jacks Coriander, roughly chopped
Method

Bring a pan of water to the boil. Add the rice and cook according to packet instructions then drain.

Meanwhile, heat a wok or sauté pan until hot. Add the vegetable oil and chicken and stir fry for 2-3 minutes until just coloured.

Add the pepper stir fry and stir fry for another 2-3 minutes until the veg is just tender.

Stir in the sweet and sour sauce and 200ml water and simmer for 3-4 minutes until the chicken is cooked through and the vegetables are tender.

Divide the rice and chicken between serving plates, top with the coriander and serve straightaway.
