Side Dishes Lunch/Dinner Spruced Up Sprouts
Serves : 4 - 6

Cooking Time: 10 minutes
Ingredients
- 500g sprouts, trimmed and halved if large
- 1 tbsp olive oil
- 1 red onion, roughly chopped
- 100g Jacks Smoked Streaky Bacon Rashers, roughly chopped
- 100g dried cranberries or dried apricots, roughly chopped
- 1 orange, zested
- Sea salt and freshly ground black pepper
Method

Fill a sauté pan or wok 2/3 full of water and bring to the boil. Add the sprouts and simmer for 2-3 minutes until just tender. Drain and set aside.

Wipe out the pan and return to the heat. Add the oil and bacon and fry over a high heat until just golden.

Add the onion and cook for another couple of minutes until just softened. Add the cranberries and stir fry for another minute.

Add the sprouts and orange zest and stir fry for a minute until everything is hot through.

Season with salt and black pepper and serve straightaway.
