Spicy Baked Eggs

Ingredients

  • 1tsp vegetable oil
  • 1 small onion, finely chopped
  • 1 garlic clove, crushed
  • ½ red pepper, finely chopped
  • ½ a mild green chilli, finely chopped
  • 1 tin Euro Shopper chopped tomatoes
  • 1 heaped tsp smoked paprika
  • Salt and pepper
  • 4 Euro Shopper eggs
  • French bread to serve

Method

  1. In a deep frying pan with a lid heat the oil, add in the fresh vegetables, garlic and chilli. Stir for a few minutes until the onions and peppers have softened.

  2. Tip in the chopped tomatoes, sprinkle with smoked paprika and season.

  3. Add 200ml of water and bring to the boil. Cook for 15 minutes until the sauce is thickened and looks slightly sticky.

  4. Carefully, so as not to puncture the yolk, crack the eggs into the hot tomato mix. Cover the pan with the lid or large plate and cook for a further 6 minutes until the white is set, but the yolks are still runny.

  5. Sprinkle the eggs with smoked paprika, salt and pepper. Serve straight away in the pan along with slices of toasted French bread for dunking.
