Side Dishes Starters/Snacks Lunch/Dinner Spiced Beans On Cheesie Toast

Ingredients
- 1 tbsp vegetable oil
- 1 small red onion, roughly chopped
- 2 tsp medium curry powder
- ½ - 1 tsp smoked paprika or chilli powder, depending how hot you like it
- 1 x 415g baked beans
- 2 slices bread
- 80g grated cheddar
- 2 tbsp roughly chopped mint
Method

Heat a sauté or frying pan until hot. Add the vegetable oil and onion and fry for 3-4 minutes until softened.

Add the curry and chilli powder and fry for 2 minutes.

Stir in the baked beans, bring to a simmer and cook for a couple of minutes until hot through.

Meanwhile, toast the bread until golden brown. Top with the cheese and return to the grill for a couple of minutes until bubbling.

Add half the mint to the beans. Divide the toast between serving plates, top with the beans and scatter the last of the mint over the top. Serve immediately.
