Snack Train

Ingredients

  • 5 mixed peppers
  • 1 cucumber, thickly sliced
  • 4 Mini Babybel, peeled and cut into thick discs
  • 200g cherry tomatoes
  • 2 medium carrots, peeled and cut into batons
  • 4 celery sticks, cut into batons
  • Mixed Jack’s snacks, to serve

Method

  1. Place 4 peppers on their sides and cut in half top to bottom.
  2. Remove any pith inside the pepper and cut the bottom third from one. Thickly slice the rest of that half and set aside.
  3. Using cocktail sticks, secure wheels of cucumber and/or Babybel to the carriage.
  4. Place the last whole pepper in front of the line and lay the last piece of pepper on top of the whole pepper to create a “front carriage/train engine”.
  5. Pierce the front of the carriage and place the leafy piece of celery into it to create a chimney stack.
  6. Fill the carriages with the veg and snacks and lay in a line on a serving plate/board.
