Side Dishes Starters/Snacks Lunch/Dinner Smashed Potato Salad

Ingredients
- 1 pack Jack’s baby potatoes
- 2 tbsp olive oil
- Sea salt and freshly ground black pepper
- 200g sour cream
- 125ml Pizza Express Ceasar dressing
- 1 pack Jack’s spring onions, chopped
- ½ pack Jack’s chives, finely chopped
Method
- Cook the potatoes according to pack instructions.
- Preheat the air fryer to 200°C.
- Drain and squish with a potato masher until 1-2cm high.
- Toss with a little oil, salt and black pepper.
- Place in the air fryer to roast for 15 minutes until crispy.
- Tip the sour cream, Ceasar dressing, spring onions, chives, salt and black pepper into a bowl and toss together.
- Add the crispy potatoes, toss to coat and serve straightaway, or chill and eat cold.
