Smashed Cheese Broccoli

Ingredients

  • 8 large broccoli pieces
  • 1 tbsp olive oil
  • 1 tsp onion granules
  • ½ tsp dried oregano
  • ½ tsp smoked paprika
  • Sea salt and freshly ground black pepper
  • ½ pack Jack’s grated mature cheddar cheese (180g)

Method

  1. Bring a pan of salted water to the boil, add the broccoli and cook for 6-7 minutes until soft.
  2. Drain and sprinkle with the onion granules, oregano, paprika, salt and black pepper.
  3. Squish the broccoli down firmly with a jam jar or solid glass, until about 5mm thick.
  4. Heat a frying pan until medium hot, add 4 small piles cheese and top with the broccoli. 
  5. Top with the remaining cheese.
  6. Fry until the cheese has melted and is golden brown.
  7. Flip over and fry again until golden and crispy.
  8. Serve straightaway.
