Lunch/Dinner Sausage Gnocchi Bake

Ingredients
- 1 red onion, thickly sliced
- 200g cherry tomatoes, quartered
- 2 peppers, seeded and roughly chopped
- 1 x 450g pack fresh gnocchi
- 2 tbsp olive oil
- Sea salt and freshly ground black pepper
- 1 handful fresh thyme leaves
- 1 pack Jack’s sausages, skin removed and cut into chunks
- 4 tbsp sundried tomato pesto
- 1 pack basil, roughly chopped
- Parmesan, to serve
Method
- Preheat the oven to 210°C, fan 190°C, gas mark 7.
- Tip the onion, cherry tomatoes, peppers, gnocchi and thyme into a large oven tray.
- Drizzle with olive oil and season with salt and black pepper and toss together.
- Lay sausage pieces over the top.
- Place in the oven to roast for 30 minutes until golden and the sausages are cooked through.
- Dollop pesto over the top then add the parmesan and basil.
- Divide between serving plates and top with extra parmesan.
