Salmon with Rocket & Crème Fraîche Dressing

Ingredients

  • The Saucy Fish Co. Salmon with Rocket & Crème Fraîche Dressing
  • 100g Radishes
  • 250g New potatoes
  • 250g Courgette
  • 1 Bunch of chives
  • 1 knob of butter
  • 1tbsp of butter
  • 1tbsp of Olive oil
  • Black pepper

Method

  1. Place the salmon fillets on a baking tray in the centre of a pre-heated oven for 20-25 mins.

  2. Grate the courgette into ribbons and thinly slice the radishes leaving to one side.

  3. Bring lightly salted water to boil and leave the new potatoes to boil for 10mins.

  4. Toss the courgette in a bowl with olive oil, salt & black pepper ensuring that each ribbon is coated.

  5. In a ridged grill pan fry the courgettes in batches cooking for 4 mins on each side until tender and place to one side.

  6. Drain the new potatoes and add a knob of butter, the sooner you add your butter the more flavour they will absorb!

  7. Mix the potatoes, courgettes and radishes onto a plate and top with your salmon and ready to eat dressing.

  8. To complete you perfectly paired fishy dish, season with a generous sprinkling of chives for a Michelin star quality dinner in no time.
