Side Dishes Salads Runner Bean & Goats Cheese Salad

Ingredients
- 250g runner beans, sliced
- 200g goats cheese - (Quality Food Award Winner)
- 50g walnut pieces
- 2 tbsp parsley, chopped
- 2 tbsp olive oil
- 2 tbsp White wine vinegar
- Salt and pepper

Method
Bring a large pan of salted water to the boil and cook the beans for six minutes. Drain and refresh under cold water. Drain again and put in a large bowl.
Add the walnut pieces over the beans and season well.
Break the goats cheese into pieces and toss through the beans and nuts.
Make a dressing by mixing together the olive oil and white wine vinegar. Pour over the beans and stir through with the chopped parsley.
Serve with some freshly baked bread.
