Side Dishes Starters/Snacks Lunch/Dinner Roasted Camembert & Potato Wreath

Ingredients
- 1kg white potatoes, very finely sliced
- 2 tbsp olive oil
- Sea salt and freshly ground black pepper
- 3 sprigs rosemary, 2 sprigs leaves picked and finely chopped, 1 cut into small pieces
- 1 x 250g Camembert cheese
Method
- Preheat the oven to 220°C, fan 200°C, gas mark 8.
- Tip the potatoes into a bowl, add the oil, salt pepper and rosemary and toss to combine.
- Wrap the base in foil of the wooden cheese box in foil.
- Place into the centre of a round ovenproof dish.
- Lay the potato slices upright around the outside of the cheese.
- Cover with foil, then bake in the oven for 20 minutes until the potatoes are just tender.
- Remove the foil and place the cheese back into the centre then score the cheese and scatter with a oil, black pepper and the rosemary sprigs.
- Return to the oven for 20 minutes until the potatoes are crispy, and the cheese bubbling.
- Serve.
