Roasted Camembert - Christmas Recipes

Ingredients

  • 1kg white potatoes, very finely sliced
  • 2 tbsp olive oil
  • Sea salt and freshly ground black pepper
  • 3 sprigs rosemary, 2 sprigs leaves picked and finely chopped, 1 cut into small pieces
  • 1 x 250g Camembert cheese

Method

  1. Preheat the oven to 220°C, fan 200°C, gas mark 8.
  2. Tip the potatoes into a bowl, add the oil, salt pepper and rosemary and toss to combine.
  3. Wrap the base in foil of the wooden cheese box in foil.
  4. Place into the centre of a round ovenproof dish.
  5. Lay the potato slices upright around the outside of the cheese.
  6. Cover with foil, then bake in the oven for 20 minutes until the potatoes are just tender.
  7. Remove the foil and place the cheese back into the centre then score the cheese and scatter with a oil, black pepper and the rosemary sprigs.
  8. Return to the oven for 20 minutes until the potatoes are crispy, and the cheese bubbling.
  9. Serve.
