Ingredients

  • 50g Euro Shopper milk chocolate, broken up
  • 3tbsp skimmed milk
  • 4 Euro Shopper digestive biscuits
  • 6 raspberries, halved and a few more for decorating
  • 2 scoops of cookie dough ice cream

Method

  1. Put the chocolate and milk into a small saucepan. Place on a gentle heat and stir until everything is melted together into a shiny chocolate sauce. Set aside to cool slightly.

  2. Take 2 digestive biscuits, put a scoop of ice cream on each and top with raspberry halves. Place another digestive biscuit on top and carefully squash down with your hand to make a secure sandwich.

  3. Scatter the remaining whole raspberries over the ice cream sandwich and drizzle with a little chocolate sauce.

  4. Pour the rest of the sauce into a ramekin and serve alongside the ice cream sandwich for dipping into.
