Lunch/Dinner Ramen Omelette
Ingredients
- I x King Pot Noodle
- 1 tbsp vegetable oil
- 3 eggs
- 1 tbsp chilli sauce
- 1 tbsp natural yoghurt
- 2 spring onions, finely sliced
- 1 tbsp coriander leaves, roughly chopped
Method
- Make up the Pot Noodle according to packet instructions.
- Meanwhile, crack the eggs into a bowl and whisk to combine.
- Heat a frying pan until hot, then add the oil and cooked Pot Noodle.
- Pour over the eggs and stir briefly.
- Add half the spring onions and coriander.
- Cook for 2-3 minutes until set.
- Tip out onto a plate, folding in half.
- Scatter with the remaining chilli sauce, yoghurt, spring onions and coriander.
