Ramen Omelette

Ingredients

  • I x King Pot Noodle
  • 1 tbsp vegetable oil
  • 3 eggs
  • 1 tbsp chilli sauce
  • 1 tbsp natural yoghurt
  • 2 spring onions, finely sliced
  • 1 tbsp coriander leaves, roughly chopped

Method

  1. Make up the Pot Noodle according to packet instructions.
  2. Meanwhile, crack the eggs into a bowl and whisk to combine.
  3. Heat a frying pan until hot, then add the oil and cooked Pot Noodle.
  4. Pour over the eggs and stir briefly.
  5. Add half the spring onions and coriander.
  6. Cook for 2-3 minutes until set.
  7. Tip out onto a plate, folding in half.
  8. Scatter with the remaining chilli sauce, yoghurt, spring onions and coriander.
