Prosecco Scones

Ingredients

  • 325g self-raising flour
  • 150ml fruit yoghurt of your choice
  • 150ml prosecco or lemonade, Sprite, Fanta, etc
  • ½ beaten egg

Method

  1. 1. Preheat the oven to 200C, fan 180, gas mark 6. Lightly grease 2 baking trays.

  2. Tip the flour into a bowl, then add the yoghurt and prosecco and stir briefly to form a really soft dough.

  3. Tip onto a floured work surface, knead gently a couple of times until smooth and pat out until about 2.5cm thick.

  4. Using a 6-7cm cutter (or whatever size you fancy) cut into discs, then place upside down onto the baking tray. You don’t need to keep them too far apart.

  5. Brush with egg then place into the oven to bake for 20 minutes until golden brown and risen.

  6. All to cool slightly before serving with cream and jam if you fancy!
