Proscuito Rolls

Ingredients

  • 2 packs parma ham
  • 1 bunch basil, leaves picked
  • 1 ball mozzarella, drained and cut into strips
  • 50g sun drenched tomatoes
  • 25g fresh pesto

Method

  1. Lay the parma ham on to a board, overlapping the slices, into a rectangle.
  2. Lay the basil leaves along the longest edge.
  3. Top the basil with mozzarella, pesto and tomatoes.
  4. Starting at the basil end, roll up tightly to create a pinwheel.
  5. Cut into 12 and serve.
