Starters/Snacks Potatoes and Kale with Fried Egg

Ingredients
- 1 tbsp vegetable oil
- 300g cooked potatoes, roughly chopped and lightly crushed (or tinned potatoes)
- ½ red onion, finely sliced
- 40g roughly chopped kale
- Sea salt and freshly ground black pepper
- 2 eggs
- 2 tsp chilli sauce

Method

Heat a frying pan until hot. Add 1 tsp vegetable oil and potatoes and fry on each side for 2-3 minutes until just getting golden brown and crispy.

Add the red onion and kale and cover with a lid and cook for another 2-3 minutes until the kale is just wilted.

Remove the lid and stir fry for 1-2 minutes until just crispy then season with salt, black pepper. Divide between serving plates.

Wipe out the pan and return to the heat. Add the remaining oil and crack the eggs into the pan. Fry for 2-3 minutes until crispy around the edges and runny in the centre still.

Place onto the crispy potatoes and drizzle with the chilli sauce and black pepper. Serve straightaway.
