Side Dishes Starters/Snacks Lunch/Dinner Pimp Your Noodles

Ingredients
- 1 can coconut milk
- 2 x King Pot Noodles
- 2 carrots, coarsely grated
- 1 courgette, coarsely grated
- 100g broccoli, cut into small florets
- 225g smoked tofu, roughly chopped
- 1 lime, juiced
- 2 tbsp roughly chopped coriander
Method
- Preheat the oven to 210°C, fan 200°C, gas mark 7.
- Pour the coconut milk into an ovenproof dish.
- Add the noodles and seasoning.
- Break any intact noodles into pieces and stir.
- Add the vegetables and tofu.
- Fill one Pot Noodle to the fill line with water and pour over the dish.
- Pour the sauce sachets over the top.
- Cover with foil and place in the oven to bake for 25 minutes.
- Stir to combine and season with lime juice and half the coriander.
- Serve straightaway with the rest of the coriander.
