Pea Guacamole

Ingredients

  • 320g frozen peas/petit pois
  • 1 chilli, seeded and chopped
  • 1 lime, zested and juiced
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 2 tbsp roughly chopped coriander
  • 2 tbsp olive oil
  • 4 tbsp water
  • 1 x large bag tortilla chips

Method

  1. Tip everything except the tortilla chips into a food processor and blitz until nearly smooth – you will need to scrape the sides of the processor down a few times.

  2. Season and decant into a serving bowl, then serve with tortilla chips.

  3. NB – if you like a crumblier texture, serve straightway, otherwise, leave for 10 minutes at room temperature for a softer texture.
