Starters/Snacks Desserts Breakfast Pancake Muffins

Ingredients
- 200g self-raising flour
- 2 tbsp light soft brown sugar
- 1½ tsp baking powder
- 3 eggs
- 50g melted butter
- 200ml semi skimmed milk
- 1 orange, zested and segmented
- 12 tsp Nutella
- 1 tbsp icing sugar
- 400g blueberries
Method
- Preheat the oven to 210°C, fan 190°C, gas mark 7.
- Lightly grease a 12 hole muffin tin.
- Tip the flour into a bowl, add the baking powder and sugar and mix together.
- Make a well in the centre of bowl and crack the eggs into it.
- Add the melted butter, milk and orange zest and whisk together until smooth.
- Divide the batter between the holes in the muffin tin.
- Place a spoonful of Nutella on top of each one then top with blueberries.
- Place in the oven to bake for 15 minutes until golden brown and just risen.
- Loosen from the tin and serve with a dusting of icing sugar, orange segments and more blueberries.
