Pancake Muffins

Ingredients

  • 200g self-raising flour
  • 2 tbsp light soft brown sugar
  • 1½ tsp baking powder
  • 3 eggs
  • 50g melted butter
  • 200ml semi skimmed milk
  • 1 orange, zested and segmented
  • 12 tsp Nutella
  • 1 tbsp icing sugar
  • 400g blueberries

Method

  1. Preheat the oven to 210°C, fan 190°C, gas mark 7.
  2. Lightly grease a 12 hole muffin tin.
  3. Tip the flour into a bowl, add the baking powder and sugar and mix together.
  4. Make a well in the centre of bowl and crack the eggs into it.
  5. Add the melted butter, milk and orange zest and whisk together until smooth.
  6. Divide the batter between the holes in the muffin tin.
  7. Place a  spoonful of Nutella on top of each one then top with blueberries.
  8. Place in the oven to bake for 15 minutes until golden brown and just risen.
  9. Loosen from the tin and serve with a dusting of icing sugar, orange segments and more blueberries.
