Lunch/Dinner One Pot Chicken Noodles
Serves : 4-6
Cooking Time: Ready in 50 Minutes
Ingredients
- 120ml teriyaki sauce
- 2 tbsp honey
- 4 tbsp Thai sweet chilli sauce
- 750ml chicken stock
- 4 garlic cloves, crushed
- 1 bunch spring onions, roughly chopped
- 2 x 250g Jack’s diced chicken breast OR 500g chicken breast, chopped
- ½ head broccoli, cut into florets
- 2 peppers, sliced
- 1 pack Blue Dragon medium egg noodles
- ½ pack coriander, roughly chopped
- 1 red chilli, finely chopped
Method
- Preheat the oven to 210°C, fan 190°C, gas mark 7.
- Pour the soy sauce, honey, Thai sweet chilli sauce and garlic into a large ovenproof dish and whisk together.
- Add the chicken and stir well.
- Break the noodle nests into pieces and place on top.
- Add the peppers and broccoli then cover with foil.
- Place in the oven for 20 minutes then remove the foil and stir.
- Cover back over and return to the oven for another 20-30 minutes until the noodles are tender and chicken cooked through.
- Divide between serving plates and top with the coriander and chilli.
