Desserts Mother's Day - Mini Almond Florentines

Cooking Time: 10 minutes plus cooling
Ingredients
- 50g butter
- 45g caster sugar
- 1 tbsp honey
- 1 tbsp double cream
- 1 tbsp plain flour
- 100g flaked almonds
- 75g dried cranberries
- 1 orange, zested
- 100g dark chocolate chunks/roughly chopped

Method

Preheat the oven to 180C/fan 160C/ gas mark 4. Line 1 large baking tray with parchment paper.

Tip the butter, sugar, honey and cream into a saucepan and bring to the boil.

Remove from the heat and add the flour, flaked almonds and orange zest and stir well.

Spoon over the baking tray into one long oblong. Transfer to the oven and bake for 10-12 minutes until just golden and set. Set aside to cool and harden.

Meanwhile, tip the chocolate into a bowl and set over a pan of simmering water until melted.

Drizzle the chocolate over the Florentine then leave to cool until the chocolate is set. Break into pieces to serve.

When cold, decant into a sealable container.
