Side Dishes Starters/Snacks Lunch/Dinner Mixed Veg And Halloumi Fritters

Ingredients
- 1 x 500g pack Jack’s frozen mixed vegetables, defrosted
- 200g halloumi, chopped into 1cm pieces
- 80g self-raising flour
- 3 eggs
- 100g Thai sweet chilli sauce
- ½ pack Jack’s coriander, roughly chopped
- Sea salt and freshly ground black pepper
- 2 tbsp Jack’s olive oil
Method
- Tip vegetables, halloumi, flour, eggs, 2 tbsp Thai sweet chilli sauce, ¾ of the coriander and salt and black pepper and stir – it will be like a sloppy pancake mixture.
- Heat a frying pan until hot, add half the oil and small spoonfuls of the mixture.
- Fry for 1-2 minutes until just set and golden brown, then flip over and cook on the other side for another 1 minute until firm and golden brown.
- Remove and place onto a plate and keep warm while you repeat with the remaining mixture.
- Serve with the remaining Thai sweet chilli sauce and last of the coriander.
