Mini Egg Mug Cake

Ingredients

  • 2 tbsp softened butter or spread
  • 2 tbsp caster sugar
  • 1 tbsp semi-skimmed milk
  • ½ tsp vanilla extract
  • 1 medium egg
  • 4 level tbsp self-raising flour
  • 50g chocolate mini eggs, 2/3 roughly chopped
  • Sprinkles to garnish

Method

  1. Place the butter into a bowl. Add the sugar, milk, vanilla, egg and beat until smooth.

  2. Tip the flour in and mix until smooth.

  3. Divide between 2 small mugs then scatter the chopped mini eggs over the top.

  4. Place both in the microwave together and heat on high for 1 minute 40 secs (700W).

  5. Leave to sit for 30 seconds then top with the remaining mini eggs and sprinkles. Best eaten warm
