Mini Egg Espresso

Ingredients

  • 180g milk chocolate, roughly chopped
  • 6 chocolate mini eggs
  • 1 tsp sprinkles
  • 50ml Chocolate Baileys
  • 50ml vanilla vodka
  • 75ml cold black coffee
  • Small handful ice 

Method

  1. Roughly chop 80g of the chocolate, tip into a bowl and heat until melted.
  2. Finely chop the mini eggs and tip onto a plate with the sprinkles.
  3. Coat the rim of 2 martini glasses with the melted chocolate then and dip the rim into the finely chopped Mini Eggs mixture and set aside.
  4. Tip the Baileys, vanilla vodka and 100g chopped chocolate into a saucepan and heat gently until smooth.
  5. Add a handful of ice to a cocktail shaker.
  6. Add the cold coffee and chocolate vodka mix and shake for a minute.
  7. Strain and divide between the garnished cocktail glasses.
