Desserts Millionaire's Brandy Ice Cream
Serves : 4 - 6

Cooking Time: 8 hours
Ingredients
- 1 x 400g tin Carnation caramel
- 300ml double cream
- ½ tsp sea salt
- 50ml brandy
- 75g dark chocolate chips
- 75g shortbread, roughly chopped
- 100g mixed berries
Method

Spoon the caramel into a large bowl then add the double cream and salt and whisk until nearly firm peaks appear.

Pour in the brandy and whisk again until if forms stiff peaks.

Gently stir in the chocolate chips and shortbread pieces then decant the mixture into a freezable storage container.

Place into the freezer for at least 8 hours or overnight. This is a “soft scoop” ice cream so won’t freeze rock hard.

Serve on its own or with some berries.
