Popcorn Cake

Ingredients

  • 120g unsalted butter, roughly chopped
  • 120g Betty Crocker velvety vanilla cake mix
  • 2 packs marshmallows (140g)
  • 3 packs Jack’s sweet and salted popcorn (50g)

Method

  1. Tip the butter into a large saucepan and heat gently until melted.
  2. Turn the heat up and cook for 2-3 minutes until golden brown.
  3. Stir in the cake mix and cook for 3-4 minutes until golden brown and sandy looking (this means that the flour is cooked out…)
  4. Add the marshmallows and cook for 2-3 minutes, stirring constantly, until the marshmallows have melted and the mixture is smooth.
  5. Tip in the popcorn and stir carefully – it’s really really hot!
  6. Stir until totally coated in the mix then tip into a bowl.
  7. Serve warm.
