Maple-Glazed Bananas with Eggy Bread

Ingredients

  • 3 slices of Thick Cut White Bread, crusts removed
  • 2 medium eggs
  • 1tbsp icing sugar
  • 1tsp vanilla extract
  • ½ tsp cinnamon
  • 100ml semi-skimmed milk
  • 1tbsp olive oil
  • 2tbsp maple syrup
  • 25g unsalted butter
  • 2 large bananas, thickly sliced
  • 2 tbsp crème fraîche

Method

  1. In a large mixing bowl beat the eggs, icing sugar,vanilla, cinnamon and milk.

  2. Cut the bread slices in half and place into the egg mixture and leave for 5 minutes so the bread soaks up all the egg.

  3. In a large non-stick frying pan add the olive oil over a medium heat and fry the bread for 2-3 minutes on each side until golden brown. Transfer to warm plates.

  4. In the same pan add the butter and maple syrup and gently bring to the boil. Add the bananas and cook for 2-3 minutes until golden and soft.

  5. Spoon the bananas over the eggy bread and dust with a little extra icing sugar and cinnamon. Serve with a dollop of crème fraîche.
