Side Dishes Starters/Snacks Lunch/Dinner Mango and Pepper Halloumi

Ingredients
- 2 packs halloumi, cut into cubes
- 3 tbsp cornflour
- 2 tbsp vegetable oil
- 1 bunch spring onions, finely sliced
- 5cm piece ginger, finely grated
- 2 red peppers, sliced
- 120g tender stem broccoli, trimmed
- 2 cans Rubicon sparkling mango (330ml)
- 2 tbsp sweet chilli sauce
- 1 lime, zested and juiced
- 2 tbsp coriander, leaves and stalk separated, roughly chopped
- Cooked rice, to serve
Method
- Toss the halloumi with 2 tbsp cornflour until coated.
- Heat a sauté pan until hot. Add the oil and halloumi, in batches if necessary.
- Fry on each side until golden brown then remove and set aside.
- Add the spring onions, ginger and pepper to the pan and fry for 2 minutes.
- Add the broccoli.
- Pour in the Sparkling Mango and sweet chilli sauce and bring to a simmer.
- Cook for 3-4 minutes until the veg are tender and the liquid reduced slightly.
- Stir in chopped coriander stalk, lime zest and crispy halloumi and cook for a couple of minutes until hot through and coated in sauce.
- If necessary, mix the remaining cornflour with a little water and stir into the sauce.
- Divide between serving plates, top with coriander and serve with rice and lime wedges.
