Starters/Snacks Salads Lunch/Dinner Mac 'N' Jack Kegs with Tomato Salad

Ingredients
- 1 red onion, sliced into rounds
- 300g mixed tomatoes, sliced thickly or halved
- 40g rocket leaves
- 1 small handful basil leaves
- Sea salt and freshly ground black pepper
- 1 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar

Method

Layer the tomatoes onto a platter with the red onions, rocket leaves and basil then drizzle over the vinegar and oil and season with black pepper.
