Lunch/Dinner Lemon Roasted Chicken

Ingredients
- 1 x 250g pack Jacks British Diced Chicken Breast
- 1 tbsp olive oil
- 1 Jacks lemon, zested and juiced
- Sea salt and freshly ground black pepper
- 1 Jacks red onion, roughly chopped
- 1 Jacks mixed pepper, seeded and roughly chopped
- 300g Jacks Long Grain Easy Cook Rice
- 2 tsp Jacks chives, finely chopped
Method

Preheat the oven to 200C, fan 180C, gas mark 6.

Tip the onion, pepper and chicken onto a lined baking tray, drizzle with oil and the lemon zest and ½ the lemon juice then season with salt and black pepper. Toss together until coated.

Place into the oven to roast for 15 minutes until golden brown and cooked all the way through.

Bring a pan of water to the boil. Add the rice and cook according to packet instructions then drain. Add the remaining ½ lemon juice and chives and stir well.

Divide the rice between serving plates and pile the chicken and veg alongside. Serve straightaway.
