Lunch/Dinner Lemon, Garlic & Rosemary Chicken Breasts

Ingredients
- 1 lemon, zested and juiced
- 2 garlic cloves, finely grated
- 2 sprigs Rosemary, leaves picked and finely chopped
- 2 tbsp olive oil
- Sea salt and freshly ground black pepper
- 4 boneless and skinless chicken breasts
- 1 bag mixed salad to serve
Equipment
- Mixing bowl
- Large frying pan
- Dinner plate to serve
Method

Put the lemon zest, juice, garlic, rosemary and olive oil into a bowl large enough to hold the chicken breasts and mix together. Season with salt and black pepper.

Slice the chicken breasts in half widthways then open out like a book.

Place into the marinade and mix around until they are all coated then cover and set aside for no more than 30 minutes - any longer and the lemon juice will make the chicken tough.

Heat a BBQ until hot but then let the flames die down or a large frying pan until medium hot, add the chicken breasts 2 at a time and fry for 2-3 minutes on each side until golden brown and cooked through.

Repeat with remaining chicken then serve with a mixed salad.
