Lunch/Dinner Leftovers Pasta Soup

Preparation Time: 30 Minutes
Ingredients
- 2 tsp oil
- 1 onion, roughly chopped
- 400g cooked turkey/ham/cooked pigs in blankets, roughly chopped
- 300g cooked carrot/parsnips/sprouts, roughly chopped
- 2 x 400g Dolmio red lasagne sauce plus 1 jar full warm water
- 250g Jack’s fresh tagliatelle or whatever fresh pasta you have to hand
- 1 x 125g ball Mozzarella, roughly chopped
- 2 tbsp flat leaf parsley, roughly chopped
Method

Heat a large sauté pan until hot

Add oil and onion and cook for 3-4 minutes

Add Dolmio red sauce plus water and bring to the boil

Add pasta, stir in gently and cook for 4 minutes

Add cooked meat and cooked vegetables and cook for 2-3 minutes

Add mozzarella and parsley and cover with lid for 2 minutes

Serve
