Side Dishes Starters/Snacks Lunch/Dinner Left Over Mash Muffins

Ingredients
- 400g cold mashed potato
- 2/3 pack Jack’s grated mature cheddar cheese (120g)
- ½ bunch spring onions, roughly chopped
- 1 egg
- 2 heaped tsp whole grain mustard
- Sea salt and freshly ground black pepper
Method
- Preheat the oven to 220°C, fan 200°C, gas mark 8.
- Tip all the ingredients into a bowl and mix together until a smooth as possible.
- Divide between a greased 6 hole bun tin/small baking dish.
- Bake in the oven for 15 minutes until golden brown and piping hot.
- Serve hot or cold.
