Lunch/Dinner King Prawn & Tomato Skewers

Cooking Time: 12 minutes Plus 20 minutes soaking time and 30 minutes marinating time
Ingredients
- 1 large garlic clove, peeled and crushed
- small bunch mixed herbs, finely chopped
- zest and juice of 1/2 lemon
- 1 tbsp olive oil
- salt and freshly ground black pepper
- 24 frozen raw peeled king prawns, defrosted
- 12 cherry tomatoes
- chilli dipping sauce, to serve

Mix the garlic, herbs, lemon zest and juice, olive oil and seasoning in a bowl. Add the prawns and stir to combine. Cover and set aside in the fridge to marinate for 30 minutes.

Soak the skewers in warm water for 20 minutes.

Thread a prawn onto a skewer followed by a tomato and a final prawn. Repeat this process until you have 12 skewers. Brush the skewers with any remaining marinade.

Heat a grill or griddle pan until hot. Cook the prawn skewers in batches for 2-3 minutes each side or until cooked through. Serve straight away with a chilli dipping sauce.
