King Prawn & Tomato Skewers

Ingredients

  • 1 large garlic clove, peeled and crushed
  • small bunch mixed herbs, finely chopped
  • zest and juice of 1/2 lemon
  • 1 tbsp olive oil
  • salt and freshly ground black pepper
  • 24 frozen raw peeled king prawns, defrosted
  • 12 cherry tomatoes
  • chilli dipping sauce, to serve

Method

  1. Mix the garlic, herbs, lemon zest and juice, olive oil and seasoning in a bowl. Add the prawns and stir to combine. Cover and set aside in the fridge to marinate for 30 minutes.

  2. Soak the skewers in warm water for 20 minutes.

  3. Thread a prawn onto a skewer followed by a tomato and a final prawn. Repeat this process until you have 12 skewers. Brush the skewers with any remaining marinade.

  4. Heat a grill or griddle pan until hot. Cook the prawn skewers in batches for 2-3 minutes each side or until cooked through. Serve straight away with a chilli dipping sauce.
