Desserts Jellybean Cookies

Ingredients
- 180g melted cooled butter
- 180g caster sugar
- 1 egg
- 1 tsp vanilla extract
- 240g plain flour
- ½ tsp baking powder
- 200g jelly beans
Method
- Preheat the oven to 190°C, fan 170°C, gas mark 5.
- Line 2 baking trays with parchment.
- Tip the butter, sugar, egg and vanilla into a bowl and whisk until smooth.
- Add flour and baking powder and mix to a soft dough.
- Stir in ¾ of the jelly beans.
- Use small ice cream scoop to portion into 12.
- Top with last of the jelly beans.
- Place in the fridge for 15 minutes.
- Bake in oven for 15-18 minutes until golden brown and just set.
- Allow to cool on the tray.
