Jellybean Cookies

Ingredients

  • 180g melted cooled butter
  • 180g caster sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 240g plain flour
  • ½ tsp baking powder
  • 200g jelly beans

Method

  1. Preheat the oven to 190°C, fan 170°C, gas mark 5.
  2. Line 2 baking trays with parchment.
  3. Tip the butter, sugar, egg and vanilla into a bowl and whisk until smooth.
  4. Add flour and baking powder and mix to a soft dough.
  5. Stir in ¾ of the jelly beans.
  6. Use small ice cream scoop to portion into 12.
  7. Top with last of the jelly beans.
  8. Place in the fridge for 15 minutes.
  9. Bake in oven for 15-18 minutes until golden brown and just set.
  10. Allow to cool on the tray.
