Starters/Snacks Lunch/Dinner Japanese Vegetable Fritters

Ingredients
- 150g plain flour
- 1 egg
- ½ pointed cabbage, finely sliced
- 1 red onion, finely sliced
- 1 pepper, seeded and finely sliced
- 1 medium carrot, peeled and finely peeled
- ½ small bunch coriander, roughly chopped
- Sea salt and freshly ground black pepper
- 2 tbsp vegetable oil
- 2 tbsp soy sauce
- 4 tbsp sweet chilli sauce
- 1 lime, juiced
Method
- Tip the flour, egg and 150ml water into a bowl. Season with salt and black pepper then whisk to a smooth batter.
- Add the cabbage, onion, pepper, carrot and coriander to the bowl and mix.
- Heat a frying pan until medium hot, add a little of the vegetable oil and spoonfuls of the vegetable mixture and fry on each side for 1-2 minutes until just golden brown and crispy.
- Repeat with the remaining mixture.
- Mix the soy, chilli sauce and lime juice together.
- Divide the fritters between the serving plates and serve with the dipping sauce.
