Japanese Fritters

Ingredients

  • 150g plain flour
  • 1 egg
  • ½ pointed cabbage, finely sliced
  • 1 red onion, finely sliced
  • 1 pepper, seeded and finely sliced
  • 1 medium carrot, peeled and finely peeled
  • ½ small bunch coriander, roughly chopped
  • Sea salt and freshly ground black pepper
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 4 tbsp sweet chilli sauce
  • 1 lime, juiced

Method

  1. Tip the flour, egg and 150ml water into a bowl. Season with salt and black pepper then whisk to a smooth batter.
  2. Add the cabbage, onion, pepper, carrot and coriander to the bowl and mix.
  3. Heat a frying pan until medium hot, add a little of the vegetable oil and spoonfuls of the vegetable mixture and fry on each side for 1-2 minutes until just golden brown and crispy.
  4. Repeat with the remaining mixture.
  5. Mix the soy, chilli sauce and lime juice together.
  6. Divide the fritters between the serving plates and serve with the dipping sauce.
