Honeyed BBQ Chicken

Ingredients

  • 3 tbsp olive oil
  • 1 tbsp paprika
  • 2 tbsp honey
  • Sea salt and freshly ground black pepper
  • 4 carrots, peeled and cut into large chunks
  • 3 small onions, peeled and cut into wedges
  • 4 tbsp BBQ sauce
  • 2 x 430g packs chicken drumsticks

Method

  1. Preheat the oven to 210C, fan 190C, gas mark 7. Line a large baking tray with parchment paper.

  2. Tip the olive oil, smoked paprika, honey, salt and black pepper into a large bowl and whisk to combine.

  3. Add the onions and carrots and toss to combine. Lift up and shake lightly then decant onto the tray, leaving the remaining marinade in the bowl.

  4. Add the BBQ sauce to the bowl and stir well, then add the chicken drumsticks and toss until coated in the sauce.

  5. Place onto the tray with the onions and carrots and place in the oven to roast for 35-40 minutes until golden brown and crispy, turning over half-way through the cooking.

  6. Serve hot or cold.
