Starters/Snacks Lunch/Dinner Hash Brown Cheese And Onion Quiche

Ingredients
- 800g Jack’s hash browns
- 1 bag Jack’s grated mature cheddar cheese
- 6 Jack’s eggs
- 250ml milk
- 2 tsp Dijon mustard
- ½ red onion, roughly chopped
- Sea salt and freshly ground black pepper
- 2 tsp fresh thyme leaves
Method
- Preheat the oven to 210°C, fan 190°C, gas mark 7.
- Line the base of a square/rectangular ovenproof dish.
- Layer the hash browns in to the dish, covering the base and sides.
- Scatter half the cheese over the “base” hash browns.
- Place in the oven to bake for 10 minutes.
- Whisk the eggs, milk and mustard together until smooth.
- Stir in the cheese and onion, and season with salt and black pepper.
- Pour the mixture onto the hash brown lined dish.
- Scatter the thyme over the top.
- Bake in the oven for 40 minutes until set, risen and golden brown.
- Serve hot or cold.
