Ingredients
- 12 slices ham
- 12 eggs
- Sea salt and freshly ground black pepper
- 2 tsp finely chopped chives, parsley, whatever herb you have to hand
- Crusty bread, to serve
Method

Preheat the oven to 200C, fan 180C, gas mark 4 or air fryer to 200C/high. Lightly grease a 12 hole bun tin, or use 4 ramekins/dariole moulds at a time.

Lay the ham slices into the tin so that each slice creates a little cup.

Crack one egg into each hole.

Place in the oven for 15 minutes/air fryer for 8 minutes, until the white of the egg is set and the ham just crispy.

Allow to cool slightly before decanting.

Scatter the chives over the top and season with black pepper, then serve with crusty bread.

These are great cold for a packed lunch, picnic or a breakfast on the go. Allow to cool to room temperature, then place in a sealable container in the fridge.
