Side Dishes Starters/Snacks Lunch/Dinner Halloumi Schnitzel

Ingredients
- 1 pack halloumi, cut into 8 thick slices
- 50g plain flour
- Freshly ground black pepper
- 2 eggs, beaten
- 50g dried breadcrumbs
- 2 tsp freshly picked thyme leaves
- 6 tbsp olive oil
- 100g honey
- ½ tsp chilli flakes
- 1 bag mixed salad
- ½ pack cherry tomatoes, halved
- 2 spring onions, finely sliced
- 1 tbsp roughly chopped coriander
Method
- Tip the flour onto a plate and season with black pepper.
- Crack the eggs onto a bowl, season and whisk until smooth.
- Tip the breadcrumbs and thyme leaves into a bowl and mix together.
- Dip the halloumi slices into the flour, egg and breadcrumbs, making sure that all sides are coated totally.
- Heat a frying pan until medium hot. Add the oil and halloumi slices, one at a time, then fry on each side for 1-2 minutes until golden brown and cooked through.
- Drain onto kitchen paper.
- Pour the honey and chilli flakes into a hot pan and heat until combined.
- Tip the salad, cherry tomatoes and spring onions into a bowl.
- Add half the hot honey and a drizzle of olive oil.
- Add the coriander to the remaining honey.
- Divide the salad between serving plates.
- Add the halloumi schnitzel and top with the hot honey.
