How to make a Greek Salad

Ingredients

  • 1 tbsp white wine vinegar
  • 3 tbsp extra virgin olive oil
  • Freshly ground black pepper
  • 1 head sweet cos or little gem lettuce, cut into quarters lengthways through the root
  • 120g baby plum tomatoes, halved
  • 2 small tomatoes, cut into wedges
  • ½ cucumber, cut into long wedges
  • 40g mixed olives
  • ½ red onion, cut into rings
  • 100g feta cheese, cut in half
  • 6 sprigs young thyme leaves
  • Crusty bread, to serve

Method

  1. Whisk the vinegar, oil and plenty of black pepper together in a small bowl.

  2. Layer all the ingredients into 2 serving bowls in the order they appear above.

  3. Drizzle the dressing over the top and serve with crusty bread.
