Side Dishes Salads Lunch/Dinner Greek Salad

Ingredients
- 1 tbsp white wine vinegar
- 3 tbsp extra virgin olive oil
- Freshly ground black pepper
- 1 head sweet cos or little gem lettuce, cut into quarters lengthways through the root
- 120g baby plum tomatoes, halved
- 2 small tomatoes, cut into wedges
- ½ cucumber, cut into long wedges
- 40g mixed olives
- ½ red onion, cut into rings
- 100g feta cheese, cut in half
- 6 sprigs young thyme leaves
- Crusty bread, to serve

Method

Whisk the vinegar, oil and plenty of black pepper together in a small bowl.

Layer all the ingredients into 2 serving bowls in the order they appear above.

Drizzle the dressing over the top and serve with crusty bread.
