Frozen Peach Mozzarella

Ingredients

  • 2 peaches
  • 4 balls mozzarella, drained 
  • ¼ red onion, finely chopped
  • 4 tsp extra virgin olive oil
  • 1 tbsp small mint leaves
  • 1 lime, zested
  • Freshly ground black pepper
  • ½ baguette, sliced
  • 80g rocket

Method

  1. Pop the peaches in the freezer for at least 4 hours until frozen solid.
  2. Divide the mozzarella between serving plates.
  3. Grate the frozen peaches over the top.
  4. Add the red onion, oil, mint, lime and black pepper.
  5. Serve with crusty bread and rocket.
