Grapefruit and Rosemary Cocktails Recipe

Ingredients

  • 50g caster sugar
  • 50ml water 2 sprigs rosemary, plus 4 small sprigs for garnish
  • 400ml pink grapefruit juice
  • 300ml diet lemonade
  • 4 slivers pink or white grapefruit

Method

  1. Placer the caster sugar and water into a small saucepan with the rosemary. Bring to the boil, stirring occasionally, then turn down and simmer for 1 minute.

  2. Remove and allow to cool briefly.

  3. Half fill 4 glasses with ice cubes, then divide the rosemary sugar syrup between the glasses. Top with the pink grapefruit juice and stir well.

  4. Pour the lemonade over the top and garnish with a sprig of rosemary and sliver of grapefruit.
