Ginger & Oat Cookies
Makes : 12 - 14

Cooking Time: 8 - 10 minutes
Ingredients
- 40g raisins
- 70g oats
- 60g wholemeal flour
- Tiny pinch of salt
- 1½tsp ground ginger
- 2 tbsp melted butter
- White of 1 small egg
- 1 sweet eating apple, grated
- 2 tbsp skimmed milk
- 1 tbsp runny honey
Method

Preheat the oven to 200°C, 180°C Fan, Gas Mark 6.

Line a large baking tray with greaseproof paper and set aside.

Place the raisins in a small bowl and cover with warm water. Leave to stand for 10 minutes to rehydrate slightly.

In a large mixing bowl add the remaining ingredients and mix well.

Remove the raisins from the water, add into the bowl and stir to combine.

Using a teaspoon dollop a 3cm ball of the mixture onto the prepared tray. Flatten slightly with the back of the spoon and repeat until all the mixture is used.

Place in the preheated oven and bake for 8-10 minutes until the cookies are golden and slightly risen.

Transfer to a wire rack and cool before serving.
