Brie Sandwich

Ingredients

  • 50g plain flour
  • 2 eggs 
  • 1 x 150g Tyrell Sweet Chilli and Red Pepper Crisps 
  • 3 x 200g brie
  • 1 large baguette
  • 150g mango chutney 
  • 40g rocket
  • 1 red onion, finely sliced

Method

  1. Tip the flour into a bowl.
  2. Crack the eggs into a second bowl and whisk until smooth.
  3. Season with salt and black pepper.
  4. Crumble the crisps in the bag until tiny pieces then tip into a third bowl.
  5. Press each piece of cheese into the flour, then eggs, then crisps until coated in each.
  6. Preheat the oven to 210°C, fan 190°C, gas mark 6 for 15 minutes until golden brown and crispy on the outside, hot in the middle.
  7. Slice the baguette in half and spread the bottom part with mango chutney.
  8. Top with the rocket, hot cheese and red onion and press the top half of the baguette down onto it until it oozes.
  9. Cut into pieces and serve straightaway.
