Full English Jacket - Baked Potato Recipes

Ingredients

  • 2 baking potatoes, scrubbed
  • 2 Jack’s sausages, skin removed
  • ¼ small tin baked beans
  • 2 medium eggs
  • 50g Jack’s grated cheddar cheese
  • 4 rashers Jack’s streaky bacon, cut in half

Method

  1. Prick the potatoes all over and cook in an air fryer at 200°C for 20 minutes or until tender and crispy on the outside.
  2. Add the bacon for the last 5 minutes of cooking time.
  3. Remove and allow to cool slightly.
  4. Holding the potato lengthways, cut the top slither off and set aside.
  5. Scoop out the potato and set aside.
  6. Squish the sausages into a flat oval then press into each potato shell.
  7. Top with the beans, egg, cheese, a little of the reserved potato, then the crispy bacon.
  8. Set the reserved slither of potato on top.
  9. Return to the air fryer for 10 minutes at 200°C until piping hot and everything cooked through.
  10. Serve straightaway.
