Fruit And Nutella Cookies

Ingredients

  • x 200g pot Nutella
  • 125g butter, melted
  • 225g soft light brown sugar
  • 1 tbsp vanilla extract
  • 1 pinch fine sea salt
  • 1 egg
  • 250g self-raising flour
  • 2 packs Jack’s fruit and nut mix (55g)

Method

  1. Dollop 12 teaspoonfuls of Nutella onto a parchment lined plate and pat into a round shape with wet hands.
  2. Place in the freezer for 30 minutes.
  3. Preheat the oven to 210°C, fan 190°C fan, gas mark 7. Line a baking tray with parchment paper.
  4. Beat the butter and sugar together until light in colour.
  5. Beat in the vanilla, salt and egg.
  6. Fold in the flour and fruit and nut mix – you will have a soft sticky dough.
  7. Flatten onto a tray and place in the freezer for the remaining time with the Nutella (at least 15 minutes.)
  8. Divide the dough into 12.
  9. Wrap each piece of dough around a frozen Nutella ball to form a ball.
  10. Place them onto the lined baking tray, making sure there’s a gap between each of them.
  11. Bake in the oven for 12-14 minutes until golden brown around the edges.
  12. Leave to cool on the baking tray for at least 15 minutes before eating.
