Starters/Snacks Desserts Fruit And Nutella Cookies
Ingredients
- 1 x 200g pot Nutella
- 125g butter, melted
- 225g soft light brown sugar
- 1 tbsp vanilla extract
- 1 pinch fine sea salt
- 1 egg
- 250g self-raising flour
- 2 packs Jack’s fruit and nut mix (55g)
Method
- Dollop 12 teaspoonfuls of Nutella onto a parchment lined plate and pat into a round shape with wet hands.
- Place in the freezer for 30 minutes.
- Preheat the oven to 210°C, fan 190°C fan, gas mark 7. Line a baking tray with parchment paper.
- Beat the butter and sugar together until light in colour.
- Beat in the vanilla, salt and egg.
- Fold in the flour and fruit and nut mix – you will have a soft sticky dough.
- Flatten onto a tray and place in the freezer for the remaining time with the Nutella (at least 15 minutes.)
- Divide the dough into 12.
- Wrap each piece of dough around a frozen Nutella ball to form a ball.
- Place them onto the lined baking tray, making sure there’s a gap between each of them.
- Bake in the oven for 12-14 minutes until golden brown around the edges.
- Leave to cool on the baking tray for at least 15 minutes before eating.
